Let’s face it….I don’t bake! The closest I get to “baking” is slappin’ on Pillsbury Ready-to-bake cookies in the cookie pan and saying to my girls “Look what mommy made for you!” It’s too time consuming, too many ingredients and I just don’t enjoy it — much to my mother’s dismay — a born baker. However, I do enjoy eating baked goods — probably more then I should!
Anyway, when I read Staci Edwards tweet from Staci Edwards Design about a “blog & bake”, I just couldn’t resist. It was a challenge, and although I didn’t like baking I had one massive weapon on my side: I can READ!! So all I had to do was choose whatever cupcake recipe I wanted and just read the instructions….how hard can that be!
We were told to choose a cupcake flavour from Ming Makes Cupcakes and I chose #24 “Coffee Chocolate Cupcakes with Baileys Irish Creme Frosting.” I couldn’t find one with any wine ingredients so I chose the next best thing: Baileys!!! If I was going to bake it then I better love it!!! So here’s my harrowing story of my baking adventure yesterday afternoon!!
[singlepic id=83 w=320 h=240 float=center]The best part of this baking exercise: the main ingredients!!! 🙂 Think I might need a quick shot for some liquid courage!
[singlepic id=86 w=320 h=240 float=center]OMG!! I can’t believe I just mixed together a bunch of ingredients and this is what I came up with! It actually looks good!!!
[singlepic id=84 w=320 h=240 float=center]Well, I better taste it to make sure it’s as yummy as it looks — just in case.
[singlepic id=85 w=320 h=240 float=center]OMG!!! It’s soooooo good, think I might actually need to taste a whole spoonful….you know…just in case!
[singlepic id=87 w=320 h=240 float=center]OK….batter is done….now what??? Oh yes, carefully pour it into the cupcake baking dish. Ok, Christine we can do this — the hard part is over!!
[singlepic id=88 w=320 h=240 float=center]Yippee…something is happening in that oven!!!
[singlepic id=89 w=320 h=240 float=center]Whaaat? Twenty minutes is already over….better take them out!!!
[singlepic id=91 w=320 h=240 float=center]OMG!!! I did it! And I didn’t even burn them (lots of patting on the back was happening at this moment – even though I was all by myself with the music blaring in the background!)
[singlepic id=90 w=320 h=240 float=center]All rightee then!! Time to tackle part 2 of this baking exercise and the best part!!! The ICING!!!! But seriously, 4 cups of icing sugar….(cavity alert!!!!)
[singlepic id=92 w=320 h=240 float=center]Wow…it’s done and its soooo yummy! Better get my trusted assistant Mackenzie to help out decorating these cupcakes….with one BIG caveat: No tasting the frosting….it’s for adults ONLY!!!
[singlepic id=93 w=320 h=240 float=center]And now ladies & gentlemen….the unveiling: Meet Coffee Chocolate Cupcakes with Bailey Irish Creme Frosting!!
[singlepic id=94 w=320 h=240 float=center]Here’s another shot…in case you missed it the first time or have fallen off your chair in disbelief that I, Christine Da Costa AKA GlamaMama actually baked these little glamcakes!!!
[singlepic id=95 w=320 h=240 float=]Well, no one is going to believe that I baked these so I better call some neighbours over for a quick cupcake party!!!
[singlepic id=96 w=320 h=240 float=center]Hmmmmmmmmmmmmmmmm…don’t you just love the way the icing just oozes over the side…..soooo delish!!!
[singlepic id=97 w=320 h=240 float=center]But now for the true test……I must taste my own creation…..and OMG!! I AM IN CUPCAKE HEAVEN!!!!
[singlepic id=98 w=320 h=240 float=center]I had soooo much fun yesterday….thanks to Staci and Ming Makes Cupcakes!!!! Will I try this whole baking thingy again……..why I think YES!!!!!! xoxo
Yay, you baked!!! Like you said, you just need to read the recipe and do what it tells you to do 🙂
Your cupcakes DO look delish with the icing oozing over the sides!!! Ummmmm…. you didn’t use all three bottles of Baileys, did you?! 😉
Kelly (cupcake #32)
Thanks Kelly! I think I might just get into this whole baking thing. I had alot of fun yesterday making these!!
And no, I didn’t use all 3 bottle of Baileys Kelly! The smaller ones were for liquid courage…LOL!! 🙂
Yay! You did it! Cheers to you lady!
I’m so glad you joined in, and so glad you will attempt baking again!
See you soon, and cheers!

Christine: They look amazing – congrats on the cupcake challenge. I’m not much of a baker either, but I make a great latte that would go very nicely with Bailey’s cupcakes…!
Now that’s a great idea…think I will make myself a quick Tassimo cappacino and have one of the remaining cupcakes left for my lunch!!!! 🙂
wow – wonderful adventure – maybe I will actually try baking – uhhhh i said maybe okay??? 🙂 Great job!!
Sandra, all it takes is a little maybe…teehee!! 🙂
Christine
Oh.Dear.God. Those look and sound amazing. Your adorable assistant has some great willpower to resist a little taste.
Angela, I would have let her have a taste but the frosting had quite a bit of baileys in it (yum for me)…she understood why she couldn’t taste it…but she was tempted!! 🙂
Christine
Ha! I felt the same way about this challenge – “I can read”. Your cupcakes look like they turned out great.

Congratulations on the yummy cupcakes. Isn’t it so fun when you SUCCESSFULLY accomplish something new? Baking scares the bejesus out of me, so this bake-n-blog provided a sense of accomplishment as well as a delicious treat!!!
I’m dying right now. Seriously. These have definitely moved to the top of my “must bake list”. Great job!

Yay Christine! They look and sound delicious. I’m sure this is the start of something new!
Looks like you had a blast making these. They look absolutely delicious!
Mmm… Bailey’s in cupcakes. That was all I needed to hear!
Looks like they turned out great! Cheers!
Bailey’s Irish Cream is my husband’s favorite. I’m trying to think what else I could put that icing on!! Congrats a successful cupcake adventure!!
Hilarious!! I loved reading your post. It just put a huge smile on my face after a hard days work. I was in a toss up about choosing my cupcake, #32, or yours. I am making your very soon. I love baileys just as much as I love pretty much anything else. Thank you so much for sharing these with us.
Sara – Cupcake #32
yay! glad they turned out for you!
Bailey’s and cupcakes? How did I miss that one? These look luscious and looks like you had a ton of fun making them.
Your post is so cute! I totally know how you feel. I don’t bake that much because nothing ever turns out it seems. I blame the oven. haha. Your cupcakes look so good. Glad you had fun!
